The microstructure of colloidal liquid aphrons (CLA) composed of polyoxyethylene 3 dodecyl ether/n-decane/sodium dodecyl sulphate or Tween 80/water was investigated by using a variety of experimental techniques, i.e. freeze fracture transmission electron microscopy, small angle X-ray scattering, differential scanning calorimetry and polarizing microscopy. The combined results indicated that the CLA consisted of spherical, micron-sized oil droplets (oil-rich phase) separated by an aqueous soapy shell (water-rich phase). There were supramolecular structures such as reversed micelles and micelles or O/W microemulsions observed in oil-rich and water-rich phases, respectively. By comparing the structure and properties of CLA with those of high internal phase ratio emulsions (HIPRE), it was found that CLA and HIPRE displayed similar characteristics with respect to overall structure, with biphasic structure and presence of the supramolecular structures in these phases. This conclusion seems to support Princen’s opinion on the nature and structure of CLA.
