The interaction between hydrogenated sodium rosinate (HSR) and gelatin in aqueous solution was investigated by fluorescence spectroscopy, synchronous fluorescence spectroscopy, resonance light scattering (RLS) and UV-Vis spectra at pH 10..80 and different temperatures.. The experimental result showed that HSR and gelatin formed a 1∶1 aggregate.. The equation for calculating the binding constant in of HSR for to gelatin was introduced based on the relationships between the fluorescence enhancement of gelatin and the concentration of HSR.. According to the fluorescence enhancement equation, the binding constants of the aggregate at different temperatures and the thermodynamic parameters at corresponding temperatures were obtained.. It was suggested that theThe binding force between HSR and gelatin wasshould be suggested to be from hydrophobic interaction..
