Enzyme-Catalyzed Regioselective Synthesis of Surcrose Esters

Enzymes have been used to catalyze the reaction for the synthesis of sucrose esters. Subtilisin and other proteases are used for the synthesis of l'-O-acyl sucrose, but do not normally accept long-chain carboxylic acids as acyl donors. However, lipases perform well with a wide range of fatty acid. In addition, it was discovered that abzymes can be used for the regioselective acylation of sucrose. Diesters and linear polyester have been obtained by the enzymatic synthesis. Enzymatic regioselective synthesis of sucrose esters is commonly carried out in dimethylformamide, dimethyl sulfoxide , pyridine and other solvents which are poisonous. In recent years, the studies on enzyme-catalyzed regioselective synthesis under solvent-free conditions and on processes of the use of less harmful solvents such as tert-butanol have been paid more attention.
